These tasty red velvet cookies are both simple and fun. You can throw them together in no time. If you want to, you can also easily amp them up with some white chocolate chips and cream cheese frosting.
They're perfect for a unique and easy treat for Valentine's day. Of course red velvet cake is often connected to Valentine's Day, but these cookies are even easier to whip up. They fit the Valentine's theme perfectly with their chocolatey flavour from the cocoa powder, (and the white chocolate chips if you add them). They're also the perfect colour for the holiday too!
For me personally, I prefer cookies over cake, so I really love these cookies. They have all the amazing flavours of red velvet cake, but in a more convenient and shareable cookie format. They're perfect with or without the white chocolate chips, but I do highly recommend them. It's also up to you whether or not you want to add the cream cheese frosting. You can either use store bought frosting or you can use my recipe for cream cheese frosting.
1. Preheat the oven to 350°F (175°C).
2. Cream together the softened butter and the sugars.
3. Beat in the egg, buttermilk, vanilla extract, and red food colouring.
4. In a separate mixing bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
5. Slowly add the dry ingredients to the wet ingredients. Mix or beat until just combined. Add the white chocolate chips (if using) and gently fold them into the dough.
6. Drop the dough onto a parchment paper-lined baking sheet. You can use a cookie dough scoop or spoons.
7. Bake in the oven for about 10-12 minutes.
8. Allow the cookies to cool. If using frosting, spread it on the cookies once they're cooled. Serve or store.
