Potato Salad

This delicious potato salad is easy to make and a great side dish for dinner or lunch. It doesn’t require too much work and is well worth making. All you need for this tasty side is potatoes, onions (red and green), pickles, mayonnaise, Dijon mustard, apple cider vinegar, and some seasonings.

There are many different ways to make potato salad, but this is my personal favourite method. While it’s believed that this well-known side originated in Germany, it seems like almost every culture has its own twist. There are more American-style versions, French, Russian, Japanese, Irish, and so on.

It’s such a versatile and adaptable dish, so feel free to alter it however you want. I give a couple ideas of ingredients to change or add, but of course, you can mix it up to fit your taste.

What do I need to make potato salad?

  • Potatoes — Around 2 pounds of yellow or red. Cut into small cubes.
  • Salt
  • Pickles — 2 pickles cut up into small pieces. Alternatively, you can use 1/4 cup of relish.
  • Red onion
  • Green onions
  • Mayonnaise
  • Dijon mustard
  • Apple cider vinegar
  • Dill
  • Garlic powder
  • Paprika
  • Pepper

How to make potato salad:

1. Add the potatoes to a large pot. Fill the pot with enough water to cover the potatoes by about 1 inch. Add 1 tsp of salt and mix. Bring to a boil. Then reduce the heat and allow potatoes to simmer for about 10 minutes (until fork tender).

2. In a large mixing bowl, add the other prepared ingredients: 2 pickles (or 1/4 cup relish), 1 red onion, and 2 green onions. Then add: 1/2 cup mayonnaise, 1 tbsp Dijon mustard, 2 tbsps apple cider vinegar, 3 tsps dill, 1/2 tsp garlic powder, 1/4 tsp paprika, and some pepper (about 1/4 tsp or less). Mix all the ingredients together.

3. Drain the potatoes. Allow them to cool for a few minutes (10-15). 

4. Add the potatoes to the bowl with the other ingredients. Mix it all together gently. Taste the mixture and adjust the seasonings, if desired, by adding more salt, pepper, or other spices/herbs. Cover and refrigerate for at least 30 minutes or overnight.

Variations of this recipe:

There are many ways you alter this recipe to fit your personal taste or based on the ingredients you have on hand. Here are a few ideas of ways to change some of the ingredients:

  • Red onion — You can swap it out for a couple shallots if you want, or maybe a different kind of onion.
  • Dill — Parsley can be used in place of or with the dill.
  • Additions — Some people like to add chopped up hard boiled eggs, bacon pieces, or celery. There are many different things you can try to add in, if you want to.

Notes:

  • Be careful not to overcook the potatoes. Make sure you check they are done cooking, then remove them from heat right away and drain.
  • You can store it for up to 5 days. Make sure to keep it refrigerated in a covered container.
