These Easter cookies have the simple and classic style of chocolate chip cookies that gets elevated with the addition of the Mini Eggs. If you've ever had M&M cookies before, these cookies are similar, but even richer and more delicious thanks to the Cadbury chocolate.
1. Preheat the oven to 350°F (175°C).
2. In a large bowl, cream together the butter and sugars with a mixer or whisk. Add in the eggs and vanilla and beat until incorporated (about 1-2 minutes).
3. In a separate bowl, add the dry ingredients (flour, salt,, baking powder, baking soda). Mix the ingredients together.
4. Pour the dry ingredients into the wet ingredients. Mix until just combined. Then add in the chocolate chips and the Mini Eggs, reserving about 1/2 cup of the Mini Eggs.


5. Use a cookie scoop to form dough balls and place them onto a prepared baking sheet. Press some of the reserved Mini Eggs into the top of each cookie.


6. Bake in the oven for about 10-12 minutes, until the edges are slightly browned.
7. Allow the cookies to cool completely. Serve and enjoy!
