Mini Egg Cookies

These Mini Egg cookies make a fun and yummy Easter treat. They’re easy to whip up and such a unique way to bring something different to a holiday party. The bright colours of the Mini Eggs make them stand out and give them a truly festive flair.

These Easter cookies have the simple and classic style of chocolate chip cookies that gets elevated with the addition of the Mini Eggs. If you’ve ever had M&M cookies before, these cookies are similar, but even richer and more delicious thanks to the Cadbury chocolate.

What do I need to make Mini Egg cookies?

  • Unsalted butter — Softened.
  • Brown sugar
  • Granulated sugar
  • Large eggs
  • Vanilla extract
  • Flour
  • Salt
  • Baking powder
  • Baking soda
  • Chocolate chips — Ideally semi-sweet, but you could use a different kind if you want.
  • Cadbury Mini Eggs — You will need about 300 g or 10 oz. Depending on what size bags are available, you can get whatever is the closest. For me, I bought two bags (200 g each) and used about one and half of the bags. *See notes for more info on how to crush them.

How to make Mini Egg cookies:

1. Preheat the oven to 350°F (175°C).

2. In a large bowl, cream together the butter and sugars with a mixer or whisk. Add in the eggs and vanilla and beat until incorporated (about 1-2 minutes).

3. In a separate bowl, add the dry ingredients (flour, salt,, baking powder, baking soda). Mix the ingredients together.

4. Pour the dry ingredients into the wet ingredients. Mix until just combined. Then add in the chocolate chips and the Mini Eggs, reserving about 1/2 cup of the Mini Eggs.

5. Use a cookie scoop to form dough balls and place them onto a prepared baking sheet. Press some of the reserved Mini Eggs into the top of each cookie.

6. Bake in the oven for about 10-12 minutes, until the edges are slightly browned.

7. Allow the cookies to cool completely. Serve and enjoy!

Notes:

  • Crush some of the Mini Eggs (set about 1/2 cup aside for topping). Place them in a large ziploc bag then use something to smash them. You can use a rolling pin, a meat tenderizer, or whatever works.
