This Italian turkey soup is incredibly hearty and easy to make. It's also quite healthy thanks to the turkey and all the vegetables. I find this soup so comforting and delicious, especially during the winter months. It's sure to help give you a nice energy boost and some warmth to help combat the cold weather.
This soup is also very versatile. You can easily swap the turkey for chicken, if you want. You can also change up the vegetables based on your personal preference or what you have on hand. I also have a similar recipe for Italian sausage soup. It's made with ground beef and pork, (just pork or just beef can be used too), instead.
1. Heat olive oil over medium heat in a large pot. Then add the onion and the ground turkey. (Cook until no pink remains in the turkey).
2. Add the vegetables (carrots, celery, zucchini, potatoes), diced tomatoes, tomato paste, chicken stock, and milk. Then add all the herbs and spices.
3. Reduce the heat to low, cover the pot with a lid, and simmer for around 30 minutes (or until the potatoes are fork tender).
4. Serve and enjoy.
