Italian Turkey Soup

This Italian turkey soup is incredibly hearty and easy to make. It’s also quite healthy thanks to the turkey and all the vegetables. I find this soup so comforting and delicious, especially during the winter months. It’s sure to help give you a nice energy boost and some warmth to help combat the cold weather.

This soup is also very versatile. You can easily swap the turkey for chicken, if you want. You can also change up the vegetables based on your personal preference or what you have on hand. I also have a similar recipe for Italian sausage soup. It’s made with ground beef and pork, (just pork or just beef can be used too), instead.

What do I need to make Italian turkey soup?

  • Ground turkey — Ground chicken can be used instead too.
  • Olive oil
  • Onion
  • Carrots
  • Celery
  • Zucchini
  • Potatoes — About 4 medium potatoes or 6 small potatoes. (They should be around 14 oz/400 g in weight).
  • Diced tomatoes — One 14 oz/398 ml can (or half of a 28 oz/796 ml can).
  • Tomato Paste — One 5 oz/ 156 ml can.
  • Chicken stock
  • Milk
  • Pepper
  • Garlic powder — To use fresh minced garlic instead, use about 6-8 cloves.
  • Oregano
  • Thyme
  • Basil
  • Parsley
  • Fennel seeds

How to make Italian turkey soup:

1. Heat olive oil over medium heat in a large pot. Then add the onion and the ground turkey. (Cook until no pink remains in the turkey).

2. Add the vegetables (carrots, celery, zucchini, potatoes), diced tomatoes, tomato paste, chicken stock, and milk. Then add all the herbs and spices.

3. Reduce the heat to low, cover the pot with a lid, and simmer for around 30 minutes (or until the potatoes are fork tender).

4. Serve and enjoy.

Notes:

  • Ground chicken can be easily substituted in place of the ground turkey, if desired.
  • Feel free to add/change the vegetables to your preference.
  • If you want to add some heat, try adding red pepper flakes (~1 tsp).
  • Store leftovers in covered containers in the fridge for up to 4-5 days.
