Egg Salad Sandwich

This simple egg salad sandwich can be made in a matter of minutes and with just a few ingredients. It’s so tasty and uses common egg salad components like mayonnaise and mustard, but its unique flavour shines through from the relish and cheese. All you will need to do for this recipe is cook some scrambled eggs, mix the eggs with a few other items, then easily assemble the sandwiches by adding the egg salad on top of some bread.

I have been making this dish for several years now and have even adapted it before to make smaller appetizers for parties as well. It’s always been well received and I often have requests to share the recipe. I had always made it with pickles originally, but in recent years I discovered that relish works just as well and helps to save some time/effort. For this reason, I explain how pickles can still be used in place of relish, but I just prefer the convenience of the relish.

Ingredients

  • Bread — Of course you can use any kind of bread that you have/prefer.
  • Eggs — I typically use large or extra large eggs, but you can use smaller sized eggs as well. If using a smaller egg, you may need to add an additional egg.
  • Milk — You can use whichever kind of milk you like.
  • Mayonnaise
  • Mustard
  • Relish — You can use pickles instead. Cut up 1 or 2 pickles into small pieces.
  • Cheese — Shredded. I find cheddar or marble work the best, but you can use a different kind based on personal preference.

How to make the Egg Salad Sandwich

1. Whisk together the eggs and milk in a bowl or a large measuring cup.

2. Cook the eggs in a frying pan over low-medium heat for about 3-5 minutes. Use a spatula to push and move the eggs around to create scrambled eggs. Cook until no longer raw (not runny/liquid).

3. Grate the cheese. (If using pickles instead of relish, cut them up as well).

4. In a bowl or large measuring cup, mix the eggs with the mayonnaise, mustard, relish/pickles, and cheese.

5. Assemble the sandwiches: spoon the egg salad mixture between two slices of bread. Top each sandwich with another slice of bread to complete. (Optional: you can cut the sandwiches into halves/quarters/etc., if desired).

  2. In a frying pan, cook the eggs over low-medium heat for about 3-5 minutes. Use a spatula to mix the eggs in order to create scrambled eggs. (Cook fully until no longer runny/liquid).

  3. Grate the cheese. (Cut up pickles if using them instead of relish)

  4. Combine the eggs with the other ingredients (mayonnaise, mustard, pickles, cheese) in a bowl/large measuring cup and stir. 

  5. Spoon the egg salad mixture on top of two slices of bread, and top each with another piece of bread to complete the sandwiches.

Note

  • You can use pickles (1 or 2) instead of relish. Cut them up into small pieces
  • Feel free to use the cheese of your choice (I often opt for cheddar or marble)
